One of the major players in the Spanish wine market is the production of Cava – a sparkling white that is produced using the traditional champagne production methods- méthode champenoise- or methode traditionnelle -with the Cava having its second fermentation in the bottle itself.

Early versions of cava were called champán or xampany – but this namehad to be changed after the french region of Champagne was awarded Protected Geographical Status – and Cava evolved.

Macabeu, Parellada and Xarel•lo have since become established as the most popular grapes for producing Cava. Under Spanish law Cava can only be produced in 6 areas within Spain, although 95% of the Cava produced comes from Catalunya – with the majority of the wineries situated in the countryside around the Barcelona area.

Wines made via the low-cost Charmat (or Italian) process (where the wine is fermented in steel vats – the method used in the production of Prosecco) may only be called 'Spanish sparkling wine'.  View our cava brochure
